PURPOSE:To obtain a processed onion food cooked in such a manner as to prevent the generation of irritating substance generating by the cutting of onion. CONSTITUTION:This processed onion food is prepared by heating an onion at a low temperature (about 150 deg.C) in the absence of water to remove >=25% of water and packaging the heated onion with a prescribed package. This preparation process contains a step to heat the onion at 100-200 deg.C with a heated pan while stirring the onion with a stirring means and a step to pack the heat- treated onion by vacuum-packaging. |
