The snail extract is prepd. by i) dissolving 0.5kg salting agent in 2kg water, ii) soaking 2.5kg snail at 2-10 deg. C for 30min. in the salting soln., iii) washing the soaked snail 2-3 times, mixing with 1kg pear and choping the mixt., and iv) resolving the protein of the chopped mixt. by leaving alone for 20 min., mixing with 3.5kg water and heat-treating the mixt. at 120 deg. C and 1.5kg/cm2 pressure to obtain the final product. |
