<p>The turning device consists of a part in the form of a clamp to hold the moulds, an assembly for rotating the clamp through 180 degrees and back again, a pneumatic securing system for holding the moulds, contg. the cheeses, in position, a system for putting the cheeses under pressure and an assembly of moulds resting on a plate. The moulds are in two parts with drainage holes at each end. When the turn is made the gas pressure holds the cheeses against their original support; when the pressure is released the cheese descent to their new positions. The operations are entirely automatic and a high mfg. rhythm is possible whilst assuring a perfect behaviour of the cheeses.</p> |
