FERMENTATION SYSTEM FOR SAKE MASH

PURPOSE:To effect appropriate temperature setting in no need of the skilled persons. CONSTITUTION:The analytical data on SAKE mash fermentation with the passage of time on individual species which have been prepared in unit A are stored in the data base B. The rule-membership function-making unit D prepares the estimation rule for anticipating the setting temperatures for the time course of fermentation based on the analytical data with the passage of time to select the rules included in the near space on the center of the analyzed past data, the fermentation temperature and the target analytical values among these estimation rules and the values of the variables of individual conditions in the selected rules and the close range are used to prepare the membership functions. The unit for estimating the set temperature C is given the past analyzed values on the mash which is now in fermentation, the fermentation temperature and the target values on the present analysis to effect fuzzy inference on the suitable fermentation temperature on the mash now in fermentation from the selected inference rule E and the prepared membership function F.
