PURPOSE:To obtain a bun with an eel filling capable of providing taste and flavor of an eel without fishy smell of the eel to persons incapable of eating UNAGI-NO-KABA-YAKI (a split eel, broiled over a charcoal fire after being dipped in a special sauce) due to the fishy smell of the eel. CONSTITUTION:This method for producing a bun with an eel filling is to broil an eel without using a sauce, then steam the broiled eel for >=30min, apply a sauce to the steamed eel without using the sauce, broil the resultant eel, then chop the broiled eel into small lumps 3, mix pieces of a lotus 4 with pieces of a burdock 5 and SHIITAKE mushrooms 6 separately from the small lumps 3 of the UNAGI-NO-KABA-YAKI, stew the resultant mixture in a broth, soak the stewed mixture in the broth, join the obtained mixture with the small lumps of the broiled eel, prepare contents, wrap the contents in a covering 1 and subsequently steam the contents together with the covering. |
