PRODUCTION OF YELLOW SAKE USING ELEMOTHECIUM BACTERIUM

PURPOSE:To provide a production process for making an yellow SAKE colored with a relatively large amount of vitamin B2 beautifully using an Elemothecium bacterium. CONSTITUTION:An Elemothecium bacterium producing an yellow pigment containing vitamin B2 is cultured aerobically in a liquid medium containing rice KOJI and the culture mixture is used as a water for SAKE fermentation to give yellow SAKE.
