PURPOSE:To obtain trehalose in high productivity by an enzymatic method to separate and purify the aimed product easier than the fermentation method, by using an inexpensive carbohydrate raw material and a stable enzyme. CONSTITUTION:Trehalose is obtained by mixing the following substances in an arbitrary order to carry out a reaction: (1) a phosphorylase capable of producing alpha-glucose-1-phosphate by acting it on a carbohydrate in the presence of inorganic phosphoric acid and/or its salt, (2) trehalose phosphorylase capable of producing trehalose from alpha-glucose-1-phosphate and glucose, (3) a carbohydrate which produces alpha-glucose-1-phosphate by the action of alpha-phosphorylase in the presence of inorganic phosphoric acid and/or its salt, (4) glucose, and (5) inorganic phosphoric acid and/or its salt. |
