PURPOSE:To obtain a sweetened food product containing phaffia coloring matter mainly comprising the coloring matter oil having not only excellent color tone, light resistance and coloring properties but also physiological activities such as antioxidizing, antiinflammatory and immunopotentiating actions. CONSTITUTION:Sweetened food products containing concentrated phaffia coloring matter oil containing astaxanthin as a main component which is a natural red coloring matter for food from the phaffia yeast producing astaxanthin. As the sweetened food products, iced sweets, sweets, jelly, jam and the like are exemphified. The concentrated phaffia coloring matter oil mainly containing astaxanthin is preferably used as a coloring agent in the form of emulsion or powder. |
