发明名称 PROCESSING METHOD FOR FOOD
摘要 PURPOSE: To provide convenience foods having the appearance and features of fresh foods by covering the outer surface of food with the mixture respectively containing the white of eggs, lactic protein, non-processed starch and water for specified quantities. CONSTITUTION: The mixture containing the white of eggs in about 5 wt.% at least, lactic protein in about 5 wt.% at least, non-processed starch in about 25 wt.% at least and water in 40 wt.% at least is prepared and the outer surface of food is coated with this mixture. A fluid loss and the degradation of texture are prevented and the coating materials are not almost sensed by naked eyes. It is preferable that one part of the white of eggs of coating is coagulated by heating, the lactic protein is denatured and the non-processed starch is pasted.
