<p>Process is intended for packing foodstuffs, partic. pork products. The product is introduced into a container which may be of any shape e.g. oval. It is fitted at its upper part with a peripheral rim, which projects outwards, and is filled to within a few mm., of the top. The product, in the container, is then cooked in an oven at 90-95 degrees C for about 3 hrs.; it is then withdrawn from the oven and filled almost immediately with a covering consisting of a jelly made from animal products. This jelly, which has previously been heated to bring it to a semi-liquid state, forms a layer which completely covers the surface of the product. A plastic closing cover is applied manually, great care being taken to remove any occluded air. The outer edge of the cover is then thermally welded around the rim of the container; the product is cooled and stored in the reversed position. As the contents are sterile after cooking and the covering is also sterile the product is assured of a partic. long shell life.</p> |
