PURPOSE:To provide the composition readily soluble even in chilled water and capable of industrially producing thermoirreversible gel on heating. CONSTITUTION:The composition comprising (A) chitosan, (B) an acidic substance and (C) at least one kind of saccharide selected from monosaccharides and oligosaccharides. Another version of the composition comprising (D) a modified chitosan prepared by deacetylating chitin in a homogeneous system or by acetylating chitosan in a homogeneous system to adjust the deacetylation degree of the product to 40-60% and the component C. |
