PURPOSE:To provide an apparatus and a method for producing smoked ham excellent in cooling efficiency. CONSTITUTION:In this apparatus in which a cooling process followed by a steaming process is carried out, introduction of steam is stopped and valves 27 and 33 are opened and mist is produced and cooling of mist is carried out. Since sprayed mist is evaporated on the surface of a semi-fabricated product of ham and its vicinity, latent heat due to evaporation is taken away from the semi-fabricated product of ham. Thereby, the semi-fabricated product of ham can be cooled in a short time, e.g. from about 84 deg.C to about 58 deg.C within about 15min. As a result, since post treatment process is facilitated and simultaneously, load in the proceeding cooling process can be reduced, rapid treatment is made possible. Further, since load of the apparatus can be reduced, operation cost can be lowered. |
