Process according to DT 1,956,523, comprising dipping fish for a short time in the pickle and then packing, is improved by treating the fish with 4-8% pickle (instead of dipping in the pickle) and packing (in combination with temporary freezing). Thus, the necessity of supplementing the pickle or discarding a partly exhausted pickle is avoided.
