EXTRACT THAT CONTAINS CAROTENOID HAVING ANTIOXIDANT ACTIVITY, ITS PRODUCTION, ANTIOXIDANT, AND COLORING MATTER

PURPOSE:To obtain a highly safe natural antioxidant or coloring matter by extracting a bacterium that produces a carotenoid having antioxidant activity and belongs to the genus Rhodobacter with an organic solvent. CONSTITUTION:A bacterium that produces a carotenoid and belongs to the genus Rhodobacter is innoculated into a medium comprising yeast extract, polypeptone, MgSO4.7H2O, CaCl2 and water and cultured at 30-40 deg.C for about 48hr to obtain a bacterium that produces a carotenoid having antioxidant acitvity and belongs to the genus Rhodobacter. The bacterium is extracted with an organic solvent such as ethanol, methanol or acetone, and the extract is concentrated to obtain a carotenoid-containing extract.
