PURPOSE:To obtain a theanderose useful as a food ingredient, etc., having excellent high cariostatic resistance, efficiently in a high yield by adding a glucosyl group donor and sucrose to a reaction solvent, treating with yeast belonging to the genus Saccharomyces not having invertase activity under a specific condition. CONSTITUTION:In a process for forming a saccharide transformation reaction product (theanderose) of the formula by adding a glucosyl group donor such as soluble starch and sucrose to a reaction solvent and subjecting carbon at the 1-position of glucosyl group to alpha-glucoside bond with carbon at the 6-position of glucose residue of the sucrose by action of a glucosyltransferase derived from a fungus belonging to the genus Mucor such as Mucor javanicus or to the genus Aspergillus such as Aspergillus niger, the reaction system is treated with yeast such as Saccharomyces cerevisiae YT1 (FERM P-13,826) not having invertase activity in the reaction solvent to give the objective theanderose. |
