PURPOSE:To reduce or remove an unpleasant taste by treating raw squids in a solution comprising a buffer solution, a penetrating agent, a protecting agent and an alkali agent. CONSTITUTION:Raw squids are cut into a proper shape and thickness and immersed in a treating solution comprising a buffer solution, a penetrating agent, a protecting agent and an alkali agent, having pH6-11 at <= room temperature for <30 hours, preferably <4 hours. An unpleasant tasty component is extracted and reduced to give a nice squid dish without requiring strong seasoning. |
