LOW CALORIC FAT ALTERNATIVE

PURPOSE: To obtain a low-calorie fat substitute which is microbiologically stabe and contains a low moisture content by injecting a water phase where non-flow property is obtained by means of adding a gelatinized composition and an oil phase including oil and an emulsifying agent through the action. CONSTITUTION: The substitute is constituted of (A) about 1-95 wt.% water phase made to be non-flow property by adding the gelatinized composition (agar and gelatine, etc.), and (B) about 5-99 wt.% oil phase including fat or oil and the emulsifying agent (lecithin, etc.). Flow property is imparted by the mutual action of the A phase and the B phase so as to attain injection.
