PURPOSE:To provide a pressure treatment method and a pressure treatment device industrially enabling the cooling, freezing, etc., of a food, etc. CONSTITUTION:Articles 14 to be treated and frozen matters 15 containing water as a main component are placed in a treating hydraulic medium 12 charged in a pressure container 1 and subsequently isotropically pressed through the treating hydraulic medium 12 to cool the articles 14. The temperature of the foods 14 is changed into a temperature.pressure region where the foods are not frozen even being cooled to <=0 deg.C under an elevated pressure, and the pressure is rapidly released to form cryohydrate nuclei in the foods 14. The pressure treatment device is provided with a pressure container 1 having a pressure chamber 6 in which a hydraulic medium 8 can be charged, a treating container 9 equipped with a treating chamber 13 having the treating hydraulic medium 12 received in the pressure chamber 6 and capable of isotropically pressing the articles, etc., and receivers 16 freely insertible into the treating chamber and piled up in the treating chamber 13 toward the axis of the container, in a state where the articles 14 are placed on the frozen matters 15 containing water as the main component inside each receiver. |
