PURPOSE:To provide a pickling process capable of reducing the weight on a pickling material to facilitate the pickling work, completing the pickling work in a short time and keeping the quality of the pickled food. CONSTITUTION:A pickling material is put into a pickling vessel 50 and immersed in a seasoning liquid. A weight is put on the pickling material and the pickling vessel 50 is placed on a mobile table 20. A driving lever 44 of a driving apparatus 40 is rotated to lift and drop the protrusion 23 of the mobile table 20. The pickling vessel 50 is repeatedly dropped together with the mobile table 20 by this process. The pickling material is instantaneously pressurized by the drop impact. |
