PURPOSE:To readily produce colorless beta-1,3 glucan in a high yield by culturing a microorganism which belongs to Aureobasidium in a specified aqueous medium according to the aerobic fermentation method. CONSTITUTION:A microorganism [e.g. Aureobasidium sp. K-1 (FERM P-12989)] which belongs to Aureobasidium is cultured in an aqueous medium containing (A) 1 to 10wt.% mixture of glucose and fructose or sucrose, (B) 0.01 to 0.3wt.% sodium ascorbate and (C) an inorganic nitrogen compound (e.g. sodium nitrate) with the ratio of the weight of carbon in the component (A) to that of nitrogen in the component (C)=400/1 to 100/1 according to the aerobic fermentation method. A simple after treatment, i.e., separation of the cell body according to the centrifugal separation method, etc., is carried out, thus producing the objective beta-1,3 glucan composed mainly of a structural unit represented by formula I (Glu is glucose; A is a sulfur-containing group such as sulfoacetic acid group) and another structural unit of formula II and containing about 1000 to 2000 both the structural units in total in one molecule. |
