PURPOSE:To provide a method for aging beef enabling beef resulted from slaughtering and dismantling cattle or thawed beef to be made into tasty beef of good smell by aging in a short time without putrefaction, and to provide a method for preserving beef after aged. CONSTITUTION:Beef to be aged is coated with such microbes as to propagate on aged beef and then aged under propagable conditions for the microbes. The beef thus aged is vacuum-packaged and preserved under conditions of suppressing the propagation of the microbes. |
