PRODUCTION OF BETA-1,3 GLUCAN

摘要

PURPOSE:To produce beta-1,3 glucan with high productivity without occurrence of coloration by culturing a microorganism which belongs to Aureobasidium in an aqueous medium containing a saccharide and a nitrogen compound under a specified condition. CONSTITUTION:A microorganism [e.g. Aureobasidium sp. K-1 (FERM P-12989)] which belongs to Aureobasidium is cultured in an aqueous medium containing a saccharide and a nitrogen compound while controlling pH of the aqueous medium to 4.5 to 6.5, preferably 5.0 to 6.0 according to the aerobic fermentation method. The obtained beta-1,3 glucan is composed mainly of a structural unit represented by formula I (Glc is glucose; A is a sulfur-containing group such as sulfoacetic acid group) and another structural unit expressed by formula II and the total number of both the structural units contained in one molecule is 1000 to 2000.
