L-SORBOSE-PRODUCING FUNGUS

摘要

PURPOSE:To provide a L-sorbose-producing fungus improved in the conversion yield of D-sorbose into L-sorbose by lowering the D-sorbose-producing ability of a microorganism which belongs to Gluconobacter oxydans or Gluconobacter suboxydans. CONSTITUTION:The growth ability of a microorganism which belongs to the gluconobacter oxydans or Gluconobacter suboxydans in the presence of low sorbite as only a carbon source is lowered to <=1/10 of that of the parent strain. The objective microorganism can be obtained by subjecting the parent strain to a conventional mutational treatment and subsequently selectively separating the microorganism from the treatment product.
