PURPOSE:To prepare a retort paste product having improved taste even by retort heating, and good storage stability, denaturing fish meat paste with an alcohol, molding it. CONSTITUTION:Salt is added to fish meat, which is ground to give fish meat paste. Preferably during grinding, at least >=1wt% animal protein or vegatable protein based on fish meat and 0.05-1.0wt%, preferably 0.1-0.5wt% alkaline earth metal, preferably calcium salt such as calcium chloride, calcium lactate, etc. are added to the paste. The fish meat paste is molded by immersing it in an aqueous solution of an alcohol, preferably >=80wt% aqueous solution of ethanol, washed with water, and subjected to retort heating sterilization. |
