PURPOSE:To obtain a material coated with an oil or fat and resistant to the dissolution of the core substance before high-temperature treatment, by coating a core substance with a molten mixture of a solid fat having a specific melting point and an edible wax. CONSTITUTION:The objective product can be produced by covering a core substance with a molten mixture composed of 100pts.wt. of a solid fat having a melting point of 50-70 deg.C and 2-50pts.wt. of an edible wax having a melting point of 65-85 deg.C. The core substance to be coated is selected mainly from food additives, and is e.g. a bacteriostatic agent such as sorbic acid, pH-modifier such as fumaric acid, seasoning such as 5'-ribonucleotide, etc., or their mixture. The wax is preferably rice wax. When the amount of wax is too small compared with the solid fat, the thermal dissolution takes place at a relatively low temperature and the cutting resistance of the coating layer is lowered. Accordingly, the amount of wax is selected to be >=2pts.wt., preferably >=5pts.wt. based on 100pts.wt. of the solid fat, and is restricted to <=50pts.wt. above which the significance of the wax is lost. |
