摘要 PURPOSE:To obtain a white sauce having excellent flavor and emulsion stability, not browning even by high-temperature heat sterilization such as retort treatment. CONSTITUTION:This white sauce is produced by blending at least one selected from a saccharide and a sugaralcohol with edible fats and oils and a sodium caseinate-containing oil-in-water type emulsion.
