PURPOSE:To obtain the subject food having good body and excellent taste, containing a highly unsaturated fatty acid by adding a specific fat and oil composition to minced fresh raw fish meat. CONSTITUTION:This processed food of fish meat is obtained by uniformly blending (B) 5-40 pts.wt. of a fat and oil composition prepared by adding solid fats and oils to marine animal fats and oils with (A) 100 pts.wt. of minced raw fresh fish meat. The fat and oil composition is prepared by mixing marine animal fats and oils having 10-30wt.% total content of EPA and DHA optionally with solid fats and oils to maintain hardness. |
