PURPOSE:To obtain an amylase inhibitor for preventing and treating diabetes, hyperlipemia, arteriosclerosis, etc., having high suppressing effect on rise in blood sugar value and high controlling effect on insulin secretion by extracting a wheat-derived substance such as wheat, wheat flour or wheat gluten. CONSTITUTION:A solution containing the amylase inhibitor obtained by extracting a wheat-derived substance such as wheat, wheat flour or wheat gluten with water, a diluted aqueous solution of salt, a buffer solution, an acid, an alkali or a hydrous alcohol is optionally purified to remove admixtures. The solution is treated with a cation exchanger to adsorb the amylase inhibitor. Then, the cation exchanger is treated with an alkali solution having pH9-13, the amylase inhibitor is eluted from the cation exchanger, the pH of the eluted solution containing the amylase inhibitor is immediately adjusted to be acidic. The amylase inhibitor is recovered from the solution having adjusted pH to give the objective amylase inhibitor useful for preventing and treating diabetes, hyperlipemia, arteriosclerosis, obesity, etc., comprising a protein composed of two subunits of the formula. |
