PURPOSE:To improve the keeping quality of a food, by using an extract of a licorice with a halogenated hydrocarbon as a preservative. CONSTITUTION:A licorice or a residue after extracting a sweetening component therefrom with an aqueous solvent is extract with a halogenated hydrocarbon, e.g. dichloromethane, trichloroethylene or chloroform, as a solvent, and the resultant antimicrobial agent alone or together with a substance having prolonging effect on food keeping quality, e.g. glycine, a condensed phosphate or organic acid, is added to a food. |
