PURPOSE:To produce barley capable of giving cooked barley having improved palatability similar to cooked rice. CONSTITUTION:Fibers, proteins, etc., in barley are decomposed to some extent either by immersing barley milled to a milling yield of 40-70% in an enzymatic liquid containing one or more enzymes selected from (1) cellulose decomposition enzyme (cellulase or hemicellulase), (2) pectin decomposition enzyme (pectinase), (3) protein decomposition enzyme (protease), (4) starch decomposition enzyme (amylase), etc., otherwise by spraying the above enzymatic liquid to the above milled barley. |
