PURPOSE:To provide gelatinized rice having excellent preservability by immersing washed rice in water of normal temperature, draining, steaming with water, maintaining in vacuum, returning to atmospheric pressure with aseptic air, sealing in a bag and aging at normal temperature. CONSTITUTION:Washed rice is immersed in water at normal temperature for 200-120min, drained and steamed by blowing steam of 0.25-1.5kg/cm<2> pressure to gelatinize the rice starch. The steamed rice is put into a bag, maintained in vacuum of >=690mmHg for 10-30sec in opened state and returned to atmospheric pressure with aseptic air. The bag is sealed and left standing at normal temperature for 24-48hr to age the gelatinized rice starch. Gelatinized rice having loosened rice grains can be prepared by crumpling the bag containing the steamed rice and a cooked rice having excellent taste and flavor can be prepared by adding water to the rice and heating the mixture. |
