PURPOSE:To obtain an emulsifier which ensures high safety, enhanced emulsifying power and stability, and improved flavor when used for foods by using a pea protein obtained from yellow peas. CONSTITUTION:Protein ingredient is extracted mainly by using water after cleaning and drying the grains of well-ripened yellow peas and removing the periderm as a raw material. In addition, the protein ingredient is concentrated and the concentrate is dried and pulverized to obtain an emulsifier. This emulsifier, originating from a natural source, is highly safe, so that it can be extensively used for foods, cosmetics medicines, etc. The foodstuffs, for which this emulsifier can be used, are, for example, emulsified foods such as dressing, and breads and confectionery. When this widely applicable emulsifier is used for these foodstuffs, excellent properties such as high safety, emulsification, stability and satisfactory flavor are ensured. |
