PURPOSE:To obtain gelatinized rice easily reconstitutable by water absorption, having excellent taste and palatability, preservable over a long period without causing the deterioration of the quality and convenient to carry. CONSTITUTION:This rice is gelatinized rice containing trehalose. It can be produced by adding 0.1-15.0wt.% of trehalose (based on total gelatinized rice) to polished rice, cooking the rice and drying the cooked rice with hot air. |
