This invention is concerned with the dairy industry, more specifically with cheese production.Purpose: to simplify the cheese production method.This method plans milk pasteurisation, thermal processing of the part of the fermentation, compound preparation from the thermally processed fermentation, the shank of thermally non-processed fermented and pasteurised milk, mixing, heating, whey elimination, partial salting of cheese granules or otherwise, cheese forming, pressing, salting in a brine and ripening.The new feature in this method is that the thermal processing of the fermentation is done by compounding it with 20-50% of pasteurised milk for cheese production. The whole amount of the fermentation has to be 1.0-3.0% of the whole milk content. |
