PURPOSE:To improve the safety in food sanitation by incorporating a specified amount of at least one phosphoric acid salt compound selected from calcium secondary phosphate, calcium tertiary phosphate and sodium polyphosphate into a specified base oil. CONSTITUTION:At least one of a medium-chain saturated fatty acid glyceride, such as a 6-10C saturated fatty acid glyceride, a coconut oil with an iodine value of 6 to 7, and a palm kernel oil with an iodine value of 12 to 20 is selected to give a base oil. The base oil is mixed with phosphoric acid salt compound(s) in an amount of 10-80wt.% based on the total composition, e.g. 45-65wt.% in the case of calcium secondary phosphate, 25-45wt.% in the case of calcium tertiary phosphate, and 50-70wt.% in the case of sodium polyphosphate of a degree of polymerization of 2 to 10, and if necessary, an antioxidant comprising, e.g. ascorbic acid, and a rust preventive lubricant comprising, e.g. stearic acid to give the objective composition having high safety in food sanitation and excellent in heat and oxidation stabilities, and abrasion resistance. |
