PURPOSE:To produce fermented soybeans, having enhanced tastiness as compared with that of the fermented soybeans produced according to a conventional method, hardly causing the deterioration in quality during the preservation and improved in keeping quality. CONSTITUTION:Fermented soybeans are produced. In the process, the fermented soybeans after completing the fermentation step are directly and hermetically sealed in a packaging material made of a material having a low oxygen permeability or deaerated, then hermetically sealed and aged at ordinary temperature. |
