The apparatus comprises a colour video camera (1), the objective (lens) (2) of which acquires a surface (3) in which the product (4) to be monitored is located, arranged on a conveyor support (5). The output (8) of the camera (1) is connected to an electronic assembly which comprises: a windowing subassembly (9) selecting a working window (W) from the image viewed by the camera (1); a comparison subassembly (10) which compares the signals representing the primary colours (red, green, blue) originating from the camera (1) with thresholds in order to distinguish the product (4) from its background and its reflections; an integration subassembly (11) which quantifies the signals representing the primary colours, taking into account the inhibition signals delivered by the preceding subassemblies; a digital conversion and processing system (12). Application: continuously determining colorimetric parameters as well as area for solid, liquid or gaseous products, in particular in the monitoring of industrial processes. <IMAGE>
