The invention relates to a coffee machine using the principle of the surge-brewing method. The object of the invention is to improve coffee machines such that the coffee grounds or the like are soaked in their entirety by the infusion water at optimum temperature. Further objects of the invention consist in the improvement of the operating convenience of appliances of the type described at the beginning, but also of appliances working in accordance with known techniques. These objects are achieved in that a novel heater has been invented which automatically delivers hot water in surges (gushes) into the filter element. The further objects have been achieved in that, irrespective of which heating system is employed, a height-adjustable filter housing for the use of different collecting receptacles is provided, the fresh-water receptacle is detachably constructed, the recognition elements mounted in the basic unit signal the functionally incorrect position of the fresh-water receptacle, the absence or the functionally incorrect position of the filter housing and the collecting receptacle, or prevent the functioning. A heat storage plate is removably attached above the standing plate.
