PURPOSE:To obtain a garlic extract free from pungent odor and containing ingredients of garlic without being decomposed, by subjecting loosened fresh garlic to heat treatment with microwave and concentrating the extracted liquid obtained by extracting the garlic under specific conditions under reduced pressure. CONSTITUTION:A fresh garlic obtained by removing epidermis of garlic and loosening the garlic is subjected to heat treatment with microwave and the garlic is heated in water under reflux and reduced pressure for 1-2hr and the extracted liquid is separated and concentrated under reduced pressure. An alliinase enzyme is inactivated and extract effect is also improved by carrying out the microwave treatment. |
