A method for calibration of the core temperature in the oven muffle of an electrical baking and roasting oven having a function selector for setting the type of heating and having a temperature selector for setting the required temperature, and having an oven muffle temperature regulator for switching the muffle heating. The oven muffle core temperature is determined by means of a temperature measuring device which is positioned in the oven muffle. Once the oven muffle has reached a steady state, the measured oven muffle core temperature is compared with the current required temperature and, if necessary, the determined core temperature is corrected with respect to the required temperature setting, via an electronic control system.
