PURPOSE:To provide a noodle mixed with a water melon sarcocarp-containing juice by processing and utilizing the water melon as a raw material for the noodle so as to utilize the characteristic flavor and color tone of the water lemon having wholly been consumed as a raw eating material, and a method for producing the same. CONSTITUTION:The noodle mixed with the water melon sarcocarp-containing juice is produced by sufficiently kneading 100 pts.wt. of wheat flour, approximately 30-40 pts.wt. of a water lemon sarcocarp-containing juice mixed with approximately 30% of ethyl alcohol, approximately 1-5 pts.wt. of cyclodextrin, and a small amount of salt, and subsequently cutting, drying or semi-drying the prepared noodle dough. |
