PURPOSE:To enable a cooking stock having a composite taste not obtainable from a single fish by a fermentation method by combining two or more kinds of sardine, mackerel, horse mackerel and bonito among blue fishes. CONSTITUTION:A stock for cooking is prepared by selecting two or more kinds of sardine, mackerel, horse mackerel and bonito from blue fishes, producing a fermentation solution from the selected fishes and subsequently converting the concentration solution of the fermentation solution into the liquid or powdery product. |
