Fruit kernel croquant has hitherto been produced in a batch process or continuous process. Even the use of the already known continuous processes does not guarantee manufacture of a product of constant quality, since the scope of process control is limited. According to the invention, the production of fruit kernel croquant such as hazelnut croquant, in a screw extruder, the conveying path of which is subdivided into individual zones which can be temperature-controlled independently of one another, making it possible to predetermine temperature profiles for optimum process control.
