PURPOSE:To obtain a method for producing a low-alcoholic fermented beverage rich in organic ingredients without producing an alcoholic solution at a high concentration in a production process and the beverage. CONSTITUTION:This method for producing a low-alcoholic fermented beverage has a step for subjecting a saccharified solution having a saccharide at a concentration so as to provide <= 3wt.% alcoholic concentration after the fermentation to the alcoholic fermenting treatment and reducing the saccharide concentration, a step for removing the moisture from the resultant solution at the low saccharide concentration and concentrating the obtained solution, a step for mixing the concentrate prepared by concentrating the solution in the previous step with the untreated saccharified solution and providing a saccharide liquid having the saccharide at a concentration so as to afford <= 3% alcoholic concentration after the fermentation and a step for the alcoholic fermentation using the saccharide liquid as a raw material. Furthermore, the beverage is produced by this method. |
