PURPOSE:To hygienically pack and store 'miso' (fermented soybean paste) of stable quality by dissolving a composition separation inhibitor/homogenizing agent in water-rich fluid 'miso' followed by putting the resultant fluid 'miso' into a narrow-necked plastic or glass bottle or container to shorten brewing period. CONSTITUTION:A stainless steel tank is charged with a formula stock for 'miso' comprising soybeans, rice, common salt, medium-contg. cultivated yeast (e.g. Zygosaccharomyces rouxii) and a large quantity of seed water followed by fermentation at 25-30 deg.C for 40 days to prepare water-rich fluid 'miso'. A composition separation inhibitor/homogenizing agent such as sodium carboxymethyl cellulose resistant to both salt and acid is then dissolved in the above fluid 'miso'. Subsequently, the resultant fluid 'miso' is packed in a narrow-necked plastic or glass bottle or container, thus accomplishing the objective packing and storing 'miso' having the following advantages: (1) hygienically, perfectly automated in its packing and storage, (2) improved in ingredient decomposition rate, (3) shortened in brewing period, (4) having stable quality in terms of ingredients, and (5) improved in handleability in its preservation and cooking therewith. |
