PURPOSE:To obtain colored mayonnaise capable of making a dish lock more attractive with various colors and widening the variety of dishes by mixing yolk of eggs colored with coloring plants to a liquid composed of oil compounded with specific amounts of vinegar, salt and mustard sauce and making the mixture to paste. CONSTITUTION:A liquid composed of 900cc of oil compounded with about 30cc of vinegar, 5g of salt and 10g of musterd sauce is mixed with the yolk of five eggs colored by adding a coloring plant, e.g., cabbage as a blue coloring plant, carrot as a orange coloring plant, spinach as a green coloring plant and stirred to make the mixture to paste. This colored mayonnaise obtained by the process is capable of changing appearance, type of dishes and even taste of mayonnaise by coloring in blue, orange, green, etc. without using a synthetic coloring agent and of widening the variety of dishes. Further, this mayonnaise is harmless to human body and can be used without care. |
