PURPOSE:To obtain an oligopeptide mixture extremely excellent as a low- allergic food and an enteral nutrient preparation. CONSTITUTION:Whey protein is hydrolyzed with proteases derived from a bacteria of genus Bacillus and an actinomyces, optionally in combination with (chymo)tripsin. The objective oligopeptide mixture is obtained by removing the enzymes and insoluble hydrolysates from the hydrolysate mixture.
