In order to clean foodstuffs taking the form of grains of wheat, grains of rice, soyabeans, sunflower seeds and coffee beans, an optical sorting device (24, 24a, 24a') is deployed following preliminary cleaning (6) and makes it possible to effect a selection by colour and/or size and/or shape. Each particle of the bulk material is assigned to a particle class determined by means of parameters and if necessary is moved from a base transporting the bulk material into a reception area (43, 44, 45) for the corresponding particle class. To clean the bulk material, foreign bodies and defective particles are screened out of the product and the product is divided into classes if necessary. <IMAGE>
