PURPOSE:To provide a taste-improving agent containing a specified flavone derivative as the active component, enriched with sour taste and cool flavor, reduced in salty taste, excellent in delicious taste and flavor and useful for a cosmetic, medicine, etc. CONSTITUTION:The taste-improving agent contains a flavone derivative of the formula (R1, R3, R4, R6 and R8 are each methoxy or H; R2 and R7 are each methoxy; R5 is methoxy or hydroxyl group), e.g. 3',4',5,6,7- pentamethoxyflavone as the active component. In addition, improvement of taste is carried out preferably by adding this improving agent to a product used in the mouth or a product capable of oral administration in an amount of 0.1ppb to 1ppm. |
