Modular fermenter for germination and lactic fermentation of cereal, 'proteaginous' and legume seeds comprises a vat with an integral base section ('caisson') and an internal hydrodynamic transfer system. Also claimed is a fermentation process obtained (sic) by the above fermenter, in which Streptococcus faecium and Lactobacillus pantarum strains selected for their capacity to produce L(+)-lactic acid are supplied in freeze-dried form on a sugar support. The vat (1) is cylindrical with a lower conical section. The transfer system (3) comprises a central column (3a) which extends to the bottom of the conical section and is equipped with four 'canes' (3c,3d), which are omnidirectional by virtue of a rotation device (3e,3f). The transfer system, which is removable from the vat, provides for injection of gases (air or CO2) and liqs. (water, opt. with added H2O2 or bacteria) into the vat. A climatisation and ventilation system (9) is provided to control the temp. and O2 supply during the germination phase. USE - The fermented prods. are useful as food or animal feed supplements. In animals, they may enhance immunity, increase wt. gain, improve fertility and improve digestion. |
